Dinner this week: Love & Lemons edition

Last week I had this recipe for Roasted Chickpea Ratatouille on my menu plan and then I got lost in the beautiful site that is Love & Lemons. I clicked for what seemed like hours, my mouth watering over all the delicious looking recipes and photos. I had pinned so many recipes I had more than enough for this week's full dinner menu plan so here it goes... this is what's for dinner this week thanks to Love & Lemons. A couple weeks ago I started meal planning dinners again and then last week I didn't get around to it. So I'm back at it this week. I'm going to try something different (for me) for the winter: I'm going to stop getting my veggie box for the most part and go to Loblaws to get my groceries. I'm finding Loblaws has really stepped up in their offerings in organic and natural food and at great prices so I'm taking advantage of that for now. (I won't mention what I'm calling Cupcake Island in my Loblaws - they built a new island full of cupcakes, cakes, cookies and chocolates that you see as soon as you walk in the door... what was I talking about again??).

Oh right, my dinner menu. Here's what I came up with for dinner this week:

Monday

Right before I made this tonight I pulled out a bag of what I thought was bulgur but I wasn't sure. I'm pretty good at knowing what most dry grains look like and I thought I had bulgur, but I didn't recognize what was in the bag. I scoured the 'net looking at Google images trying to figure it out. Anyway I took a chance and cooked it and after some trial and error it turned out! I'm still not sure if it's bulgur though! The dish was super yummy. I loved the crunchy roasted almonds and feta!

I have a love/hate relationship with peanuts. I love the taste of them but I've heard they aren't the best things to eat so I tend to avoid them. When I saw this dish however I wanted to try it.

Leo will probably cry that there are black beans and sweet potato in these and then Mila will copy him by saying the same thing and then she'll shove them in her mouth.

We typically either take take out on the weekend or if I have enough random food leftover from the week I'll make up something new to eat!

Well it seems I'm sick as a dog with a cold of some sort. The kids and I have been relatively lucky with not getting sick this year. I remember getting sick like this before Christmas and that's about it really. I know lots of people who haven't been so lucky.

Anyway, I gathered up some strength to plan some meals this week. Last week was a bit of write-off because it was a short week from our trip to Florida.

Here's what I'm thinking for dinner this week:

Monday
I wanted to make something green for St. Paddy's Day so I'll be Kale Pesto Pasta with Ricotta and Chili  from Heather Christo on Monday. I'm getting kale in my veggie box so I'm kind of hoping it comes early tomorrow!

Tuesday
20-Minute Chickpea Curry from Creme de la Crumb

Wednesday
Leek Fritters (and likely a salad of some sort) from A Thought For Food

Thursday 
Sweet Potato Enchiladas from Damn Delicious

Friday
Swiss Chard and Ricotta Pizza from Real Simple

Ok now I'm hungry. Mark's making burritos tonight and I'm starting to get my appetite back!

I just finished putting together my menu plan for this week and boy am I hungry all of a sudden! Thankfully my hubby just brought me in a brownie from my favourite brownie place so I'm good.

If you're like me, you're craving some lighter meals this week. Based on the photos, these seem like they'd be heavy, but the ingredients tell me they're quite light and healthy, while still maintaining the heartiness that we want during the winter months.

It's a short week so less cooking (ya right...). I had a few veggies in the fridge I had to use up so here's what's on the menu this week.

Tuesday
I made this last time and it was just ok, but I have some kale to use up so I'll have to add more garlic and onions or something.

Wednesday
My friend C made this and she said it was really tasty so I'm looking forward to trying it this week.


Thursday
Tacos with spicy, smoky lentils
I'm very excited to try out some recipes from The Southern Vegetarian I received in the mail recently. It's a good way to kick up your veg dishes a notch. This week I'll try these tacos on Thursday.

I'm not sure about you, but my grocery bill is way out of control. I think groceries account for more than 50% of our expenses. It feels that way anyway. I've mentioned before that menu planning helps a lot with gaining more control over spending too much on food, but my planning went out the window last summer. It got hot. All I wanted to eat was BBQ meat and salad. Oh... and I had a baby.

So, I've decided to get back onto the meal planning bandwagon. Last week was great. I didn't have to leave the house once during the week to get something extra. This week I managed to get most items I needed over the weekend, but I still may need to get out for a couple things. The great thing about having a pretty well-stocked pantry is that sometimes you can just wing it with what you've got on hand if you don't feel like going out.

I decided to share what's on the menu for this week. I'm hoping it will keep me motivated to keep with the menu planning program.

Monday
Kale and mushroom pizza

I made this pizza tonight (not my photo) and it was pretty good. I used this pizza dough recipe, but I didn't have enough spelt so I used a cup of all-purpose flour instead. Delish.

Tuesday
Veggie Fried Quinoa

Mark's out at a golf tournament so I think I'll make this Veggie Fried Quinoa from Damn Delicious and if I'm feeling spunky I might make some cucumber carrot fresh rolls.

Wednesday
Pasta with Lentils and Kale

I didn't really want to have pasta on Wednesday, but I had to shift a few menu items around since I'm hosting my book club last minute and need something easy to make. This pasta with lentils and kale honestly doesn't sound super yummy, but the reviews were good so we'll give it a whirl.

Thursday
Roasted zucchini, black bean and goat cheese enchiladas

Everything about these enchiladas from The Sprouted Kitchen is making my mouth water. Enchiladas can be a lot of work, but I'm hoping these won't be too bad. I'm opting to make the enchilada sauce she mentions in her post so we'll see how long that takes. My time management isn't always the best it seems.

Friday

Grilled shrimp and scallops with grilled peppers and quinoa

Friday seems like a good day for the BBQ. We're still not eating meat at home, but still tend to have fish at least once a week. I actually still need to get the shrimp and scallops this week so hopefully this pans out.

Well that's it! Saturday and Sunday are typically one day of leftovers and one day of eating out.
