My favourite cookie recipes

Sunday, February 28, 2016

I've been a cookie making machine lately and although I like the oozy, gooey buttery kind, I prefer to make cookies that pack a nutrition punch. I also want them to be easy.

Here is a list of my go-to cookie recipes:

I made these with cashew butter and they were heavenly!

I made these twice in one week they were so good!

I've made these cookies several times and they're always a hit.

These are super simple to put together an hour before friends come for a visit! Love this one.

Again another super quick one to make if you have the pumpkin on hand.

My ultimate favourite breakfast cookie. So easy to make and packed full of goodness.

Ok clearly I love cookies and may have a problem :). I hope you get to enjoy one or more of these!

PS: When it calls for sugar I use coconut sugar.

10 vegetarian dinners from Pinterest

Tuesday, October 13, 2015

I had someone ask me the other day if I had any vegetarian recipes I could share. My response was: "Are you on Pinterest? Because I have more than a thousand recipes on there if you care to look at them."

Pinterest is my online cookbook. It's my first stop for when I'm meal planning for the week. I'm also constantly adding new recipes.

Today I thought I would share 10 recipes from my Pinterest food page that I've tried and loved. All the links below link to Pinterest for easy pinning. Here we go!

1. Fusilli with Roasted Eggplant and Goat Cheese (I'm having this tonight!)
2. Julia Child's Eggplant Pizzas (I cut the skin off for the kids)

3. Lentil Walnut Tacos
4. Big green salad (Use up whatever you have in the fridge!

5. Spaghetti Squash w/ Chickpeas & Kale

6. Avocado & quinoa stuffed acorn squash

7. Ricotta Stuffed Eggplant Rolls

8. Chickpeas With Chard and Pan-Roasted Tomatoes

9. Harvest Wild Rice Skillet

10. Kamut Pasta with Roasted Veggies

Bonus: a healthy salad dressing

pinterest in the kitchen

Thursday, May 16, 2013

I think I've mentioned before* that I love Pinterest for keeping track of my recipes. I love looking at pictures when I cook to see if my final dish looks anything remotely like the one in the photo (most times it does not).

I thought I'd share some of my latest food pins of recipes I've tried and/or want to try.

Portobello Mushroom Burgers Allrecipes.com: I made these last night and they were a nice alternative to a veggie burger and my hubby seemed to like them. I didn't have time to marinate them for as long as the recipe mentioned, so I think they would be a bit tastier if I had let them sit a bit longer.

Arugula and Lentil Salad with Goat Cheese - Martha Stewart Recipes: Everything about this looks scrumptious! I haven't tried it yet but it's definitely on the list to try soon. I like anything with tomatoes and goat cheese.

Pasta Salad with Goat Cheese and Arugula from Martha Stewart: Pasta with goat cheese? You've won me over. Again, haven't tried this but it looks too good to pass up.

Grilled Squash Ribbons from Whole Foods recipes: I thought this is one of the prettiest ways to grill summer veggies (to be honest, it kind of looks a little like cold cuts and bacon).

2 Ingredient Organic Dark Chocolate Trail Mix Energy Bites from Undressed Skeleton: This is likely one of those snacks you're supposed to eat one of as a serving but that I would eat 10 (or all of them in one sitting). These seem like the perfect mix of salty and sweet!

So that's the latest on my Pinterest food board.

What are you cooking these days?

*I realize that all of my photos are gone from the post mentioned, but I'm too lazy to look for them now. Anyone else annoyed at the new way (or lackthereof) to embed photos from Pinterest? I supposed it's a way to disuade people from using them illegally.
